Central to this is our sense of community, our appetite for food provenance and a focus on sustainable food practices. Through our relationships with farmers, artisanal suppliers and providores, we source fresh, seasonal, regional produce wherever possible. This local focus supports our sustainability, animal welfare and biodiversity goals which are all central to our values as a business and central to the values for Zoo’s and Aquariums. 

In partnership with our clients, we’re increasing our focus on seasonal, locally sourced produce that supports local producers and communities reducing food miles, carbon footprint and the environmental impact of our supply chain. We’re working to change the mindset of consumers to help them make more informed, more sustainable choices through better promotion of climate friendly menus and reducing the proportion of meat on every plate. We set out to inspire a culture of sustainability in everything we do, extending to this year’s ZAA Conference, for example, where we have developed all menus to be completely plant forward, with a focus on locally sourced and seasonal produce.
